Marketing-savvy Marco Caprai has taken a difficult, little-known variety and turned it into an international superstar. A made-to-please wine—meaning all nuts and bolts are screwed tight in terms of color, aromatics and structure—it has tar, coffee, leather and velvety fullness in the mouth.
