Oysters, jumbo shrimp, king crap, mussels and lobster. Yep, it’s the classic raw bar and perfect for the holidays. You’ll the need the perfect wine to pair. Two wines work very well with a raw bar, Champagne and Sauvignon Blanc. The Schug Sauvignon Blanc is a classic Sonoma style that conjures up thoughts of crisp, minerally Loire Valley Sancerre. Schug was founded in 1980 by Axel and Walter Schug. Winemaker Michael Cox joined Schug in 1995. Schug has been turning out award winning Sauvignon Blanc ever since. This well-balanced Sauvignon Blanc is a blend of vineyards from very different microclimates in Sonoma County. Grapes grown in the cooler Carneros district contribute spice and acidity for excellent food compatibility, while the warmer-grown Bennett Valley component contributes lush fruit flavors reminiscent of melon, honeysuckle and grapefruit. These flavors are enhanced by the creamy richness of fermentation and aging on the yeast (“sur lie”). This wine finishes with a clean, crisp acidity that makes it an ideal accompaniment to a wide range of soups, salads and shellfish dishes.
Wine Spectator
A slightly resinous, piney note gives this some charm, complimenting the tangy lemon and lime flavors, with smoky overtones and good intensity on the finish. Drink now. 2,850 cases made.
