Brooding and boldly concentrated. There are barrel fermentation cues, yet little overt oak evident – a nuttiness (almond, Amoretti biscotti) and char/toast coupled with a flash of formic & volatile acidity, and malt. Pomegranate/mulberry pip mesh with rhubarb & spice.
Firm, full-bodied. Intense, replete with a rigid tannin structure, grip. Barrel fermentation characters are framed by espresso & bitter chocolate masking any suggestion of 100% new oak. Truly complex… a continuum of dark ripe fruits giving way to an impressive palate length and a ‘residual’ Cabernet flavour. Elements of rhubarb, blackcurrant , soy and the faintest suggestion of mint are reluctantly emitted – this wine will only reveal more with age/patience.

The Bin 707 Cabernet Sauvignon was aged for 16 months in new American oak hogsheads. A glass-coating opaque purple, it displays aromas of pain grille, pencil lead, mulberry, spice box, and black currant. Medium to full-bodied and seriously structured, it has the fruit to complement its frame. On the palate, espresso and chocolate make an appearance along with layers of savory black fruits. Dense and exceptionally lengthy it will continue to unwind for another 6-8 years and drink well from 2015 to 2031.

Wine Spectator

Rich, ripe and focused, this is impressive for its transparency, delivering a lively mouthful of currant, plum and blackberry fruit shaded with spicy, delicately herbal overtones. Finishes with length and elegance. Best from 2010 through 2016.
