Christian Moreau, one of the leading figures in all of Chablis, has been producing the wines he loves under his own name since 2001 when he, and son Fabien, founded Domaine Christian Moreau Pére et Fils. Fabien became the winemaker with the 2002 vintage, and is already producing remarkable results. With previous experience in New Zealand, as well as with Michel Laroche and Domaine Chevalier, Fabien is a visionary young winemaker who is a sincere adherent to the tenets of terroir. Moreau's winemaking philosophy is non-interventionist at its core, entailing biodynamic practices aimed toward creating low-yield, high-quality harvests. The wines of Christian Moreau Pere et Fils are as remarkable for their authenticity and distinctiveness as they are for their consistently exquisite quality.
This Chablis is aged 100% in stainless steel and has a classic aromatic profile of green fruit, oyster shell and hints of saline. Racy and pure middle weight flavors on the palate where more minerality resurfaces on the punchy and lingering finish.
