Cascina degli Ulivi produces wines from vineyards of around 11 hectares that have been worked using biodynamic viticulture methods since 1985. The estate has been in the Bellotti family since the 1930’s and is now run by Stefano and Zita Bellotti. They are committed to the fundamental beliefs of bio - dynamics. In the Gavi town of Tassarolo they run the estate as an organic farm with a restaurant and accommodations where practically everything served is bio - dynamically and organically raised. The Bellotti family’s Gavi is produced from 100% Cortese. Textbook Gavi is cool, clean and crisp. The Cascina Degli Ulivi is a perfect example. Light color and fragrant aromatics of white flowers, warm stone, pears and apples. The palate is light and refreshing with bracing acidity and wonderful balance. A perfect palate cleanser and stimulator. The wine is a natural pairing with rosemary roasted ham but also makes a terrific spring time sipper.
