The deep velvety red of the 2003 Cabernet Sauvignon from Paringa is very similar to the lovely red/black of a climbing rose. The intensity and brilliance hint at something good to come, and good it is although a little shy at this stage. On the nose you will find the berry and floral characters of a well made Cabernet, and these will only develop and become more complex, and delightful, as the wine matures. The palate is similar, a little reluctant to show off at this early stage, but the lovely and well balanced Cabernet fruit will develop and expand. Even now, the wine is well made and beautifully balanced, with a flavor that carries right through the palate. To drink now is easy, but while refraining is harder, a few more years in bottle will see this wine really blossom into a wonderful, flavorsome, easy drinking Cabernet.
